Every defect in the vineyard is a correction in the winery. We strive to not have faults. Those we can’t avoid, we accept and defend.

Cascina Ebreo is not afraid of wine.

It doesn’t live by the obsequious reverence that some producers hold for their bottles, their terroir, their vineyards. It respects the greatness, the power and the originality of these, but it’s not afraid to come face to face with the most dazzling and undervalued aspect of wine: the fact that it’s an interplay of forces between human desire and untamed expression, between technique and nature.

 

 

Cascina Ebreo believes in wine.

In its austere character, never brought to heel by the will of the winemaker. It believes in the land, but doesn’t turn it into a religion. It believes in native grape varieties, without elevating them to shrines of perfection. Cascina Ebreo believes in wine drunk, appreciated, enjoyed at any time and for any occasion.

Cascina Ebreo
has no recipes.

It doesn’t have a dogmatic philosophy, a rigorous winemaking creed, an oenological doctrine. It thrives on contrasts and passions, on close reading of the changeable and often elusive character of wine. And it conveys this mystery. Unsuccessfully, of course.

Cascina Ebreo does not have fixed times

It knows the date of birth, the vintage of a wine. But it’s not sure about its maturity, when it’ll be ready to sell. It’s the wine - and only the wine - that can say when it’s ready. Wine isn’t made, it’s waited for.
